Simple Fixes For Common Dinner Mistakes

Timing is important when cooking meat. If your recipe calls for a 30-minute cook time, watch the meat carefully because it could cook through much sooner. A meat thermometer helps with this. If your meat does overcook, shred the meat and use it in a pot pie or pasta sauce.

A Thin Sauce

Cornstarch can thicken and save a thin sauce. Create a cornstarch slurry by mixing equal parts cold water and cornstarch into the sauce. Cook 2-5 minutes until the sauce reaches your desired thickness. This also works with curries and soups.

How To Use Your Oven Racks

Thanksgiving is over, but there’s plenty of holiday cooking and baking in your future.

That means you’re using your oven more than ever.

You’ve heard that different dishes should be placed on specific oven racks for optimal roasting, baking or broiling. But how do you remember what goes where?

It’s time for the Rule of Thirds!

1. Top Rack or Upper Third — Use this space for dishes which need browning on the top. This includes casseroles, crisps, gratins, meringue pies and broiled dishes.

2. Middle Rack — Smack dab in the middle of your oven, this position allows heat to circulate evenly. The middle rack is useful for baked dishes where you need only one rack. If you don’t know where you should place a dish, the middle rack is a good default.

3. Bottom Rack or Bottom Third — Dishes that need a crispy, brown bottom go here. Food such as pizzas, breads and fruit pies are best on the bottom rack.

Remember! If you’re cooking more than one dish at the same time, place them on the top and bottom racks and rotate halfway through the cooking time.
